I have to say blueberries are my second all-time favorite fruit after cherries. I have four low bush blueberry plants that are loaded with dense clusters of grayish green looking blueberries but nary a ripe blue one in sight. I blame the birds for their sense of when to go in for the plucking as well as non-cooperation from Mother Nature for this extremely dry and hot summer.
Now that banana bread has slipped on its last peel as the comfort food we craved every time we heard grim news about the coronavirus, blueberry everything has taken its place — from pies to muffins, scones, sauces, cookies and more. As soon as I can get a couple cups of blueberries off those bushes, nice and moist blueberry muffins are on my baking agenda. Hot out of the oven and paired with a cuppa tea, they will make mornings a bit more cheerful.
TRUE BLUE BLUEBERRY MUFFINS
For the muffins:
1 1/2 c. plus 1 T. all-purpose flour, divided
2/3 c. sugar
1/2 t. salt
2 t. baking powder
Zest of 1 large lemon
1/3 c. vegetable oil
1 large egg
1/3 c. half-and-half
1 1/2 c. blueberries
For the streusel topping:
1/2 c. coarse white sugar
1/3 c. all-purpose flour
1 1/2 t. ground cinnamon
1/4 t. nutmeg
4 T. cold butter, cubed
Preheat oven to 400 degrees. Line a muffin tin with muffin papers; if using large paper liners, you will need 6, or 8 for smaller muffins.
In a bowl, mix the 1 1/2 cup flour, sugar, salt, baking powder and zest. In another bowl whisk together the oil, egg and half-and-half. Add the oil and egg mixture to the flour mixture and combine well.
In a small bowl, combine the blueberries with the remaining tablespoon flour and toss to coat them. Fold the blueberries into the flour mixture being careful not to mash them.
To make the streusel topping: Mix together the coarse white sugar, flour, butter, cinnamon and nutmeg, and sprinkle liberally over the top of the muffins.
Bake for 25 minutes until muffins have puffed up and browned. A cake tester inserted in the center of the muffins should come out clean. Cool on rack. Makes 6 large or 8 smaller muffins.
